    Clinton County Maple Syrup Time


    Yesterday I tapped the sugar maple trees at Horsefeathers Farm. You identify a sugar maple by the shape of the new bud wood as the picture shows. Next you drill the south side of the tree above a major root, install a tap and gather the sap in buckets. Next you boil the sap without stirring to one 40th of the original volume. And then you have maple syrup!
